Pumpkin with Strong Ricotta Cheese
600 gr. pumpkin
ricotta forte (strong)
2 bay leaves
extra virgin olive oil
1 clove of garlic whole
salt and pepper.

Gently fry the whole garlic in the oil and add the pumpkin which has been pre cut into pieces, peeled and washed Add the red pepper, bay leaf and salt. Remove the garlic clove.
Allow to simmer for 15 minutes, stirring periodically.
Add a little ricotta before removing from the heat. Transfer to a dish and add as much ricotta as you desire.
You can accompany this dish with toasted bread.

You can also add to the sauce by adding capers, chopped celery and onion slices. To make the dish even tastier, fry an anchovy in the pan together with the garlic. Adding black olives is another alternative.
