Tarallini with Pepper (Savoury Biscuits)
500g 00 type cake flour, 100g olive oil, ½ teaspoon baking soda, White wine, as much as needed, Ground pepper to taste, 2 Teaspoons of salt.

Sift the flour and form a well.
Add the oil, baking soda, pepper, freshly ground in the quantity that you desire and the salt. Add the wine a little at a time so as to create a mixture with the consistency of bread dough.
Roll out pieces in cylindrical forms and cut them into smaller pieces then roll them in shapes similar to mini doughnuts.
Place on an oven tray with greaseproof paper and bake at 180 degree until golden in colour.
These savoury biscuits are best enjoyed with a good glass of red wine.
As an alternative to using pepper, is to use fresh chopped chili or fennel seeds.
