Stuffed Courgette Flowers
Ingredients for 4 persons:
12 Courgette plant flowers; 200g fresh goats ricotta cheese; 1 clove of garlic chopped; 2 eggs; a table spoon of parmesan cheese; breadcrumbs; chopped parsley, 1 pinch of nutmeg; olive oil and a pinch of salt.

Carefully take out the stigma's from the flowers.
In a bowl mix the ricotta, the chopped garlic, parsley, egg yolk, Parmesan cheese, nutmeg and salt.
Carefully stuff the mixture in the flowers, dip them individually into a beaten egg mix and dust them with the breadcrumbs.
Fry these in a pan with a fair amount of hot oil.
